Delicious Pumpkin Oat Muffins

Pumpkin is a Fall must have. I love pumpkin pie followed by pumpkin muffins.  Not only does pumpkin taste delicious but it’s nutrient dense. These pumpkin oat muffins are easy to make, delicious and healthy.

I used to love baking. My first baking experience were muffins, I made a lot of muffins. Fast forward to mom life, finding time and following directions without getting distracted is challenging these days. But every once in a while I get the desire to bake something. My girl friend recently had a baby and Miss E. helped me make these delicious pumpkin oat muffins. I saw this pumpkin recipe from Pinch of Yum and this one from Sprouted Kitchen and got inspired to make these delicious pumpkin oat muffins.

Pumpkins are a fall must have, the flesh is a good source of fibre, vitamin A & C, folate, potassium, and phosphorous. Pumpkins, similar to other orange vegetables, are high in the antioxidant beta carotene, a precursor to vitamin A which is good for night vision.

Delicious Pumpkin Oat Muffins

Ingredients

  • 2 cups of Oats ( I used gluten free )
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1/4 tsp salt
  • 1/2 cup of dark chocolate chips
  • 1/4 cup of roasted pumpkin seeds
  • Wet ingredients:
  • 1 cup of pumpkin puree, real pumpkin.
  • 2 eggs, beaten.
  • 1/2 cup of maple syrup.
  • 1/3 cup of coconut oil, melted ( or other cooking oil).
  • 1/4 cup of milk.
  • 1 tsp vanilla

Instructions

  1. Preheat oven to 375 degrees. place cupcake liners in muffins tins
  2. Pulse oats until they resemble a fine flour.( or you could use oat flour)
  3. In a large bowl, combine all dry ingredients.
  4. In a medium bowl , combine wet ingredients.
  5. Add wet ingredients to dry and mix until combined but do not over mix.
  6. Fold in chocolate chips.
  7. Fill muffin tins 3/4 full and sprinkle the top with pumpkin seeds and additional chocolate chips if you like.
  8. Bake for 20-25 minutes. Check for doneness by placing a toothpick in muffin and if it comes clean they are done.
  9. Let them cool on cooling rack.

The thing I love about muffins is the add in’s are endless. I kept the add in’s to a minimum but you could easily add raisins, walnuts, and/or  homemade applesauce. You really can’t go wrong.

On the weekends, the like to help me make waffles and these gluten free pumpkin waffles are family favorite. This weekend we are going to try these pumpkin pancakes by cookie and kate. What’s your favorite pumpkin recipe?
