Creamy Peach & Mango Popsicles

So far July has not been your typical Vancouver summer. Instead, its been a bit gloomy with the sun peaking out around 3 pm. But the long range forecast looks like its going to be hot hot hot. Are you ready? We sure are.  Since purchasing a Vitamix we have been experimenting with smoothies. The girls are crazy for smoothies and love the mango and peach combo. I am secretly hoping they will fall in love with this green smoothie. With the temperatures warming up this week we decided to make creamy peach and mango popsicles. These healthy popsicles make a perfect summer treat to beat the heat.

When it comes to summer treats, I have a sweet spot for a simple bowl of vanilla ice cream. I don’t keep much in the house, I know it won’t last long. I also appreciate that bowl a lot more when I do have it. However, we always have fresh and frozen fruit. We went to the farmer’s market and Miss E tried a peach and now all she wants is peach everything. There is no way I can say no when my 5 year old is more excited over a bag of peaches as she is over a bowl of ice cream. This just melts my heart when I see my girls get excited about HEALTHY food.

These creamy peach and mango popsicles are super easy to make with only 4 ingredients. The hardest part is waiting for them to freeze. Unlike most sugar ladened popsicles these are naturally sweetened with fruit except for a bit of honey, if you are looking for a vegan version you could simply leave out the honey or add coconut sugar instead. The coconut milk added a nice creaminess with a hit of coconut.  For a little extra treat we dipped some of the popsicles in dark chocolate, perfect for chocolate lovers.

Ingredients

  • 2 cups peaches , peeled ( 1 used fresh)
  • 1 cup of mango ( I used frozen)
  • 2 tbsp honey
  • 3/4 cup of coconut milk

Instructions

  1. Add ingredients into blender and puree
  2. Pour into popsicle mould and freeze

Notes

If you want to dip the popsicles in chocolate. Melt chocolate with coconut oil using a double boiler over medium heat
