Creamy, Decadent Vegan Chocolate Pudding.

This creamy, decadent vegan chocolate pudding is amazing. I got this recipe inspiration from a friend on vacation, my girls loved it, as did I. I like to place a plate of fruit on the table at dinner time for dessert.  We have been enjoying an abundance of fresh berries, plums, and peaches all summer long. I am so lucky the girls are adventurous eaters. Since I got carried away and bought too many avocados I thought of chocolate pudding.   This recipe is perfect for using over ripe avocados. It’s creamy, decadent, and vegan chocolate made with avocados.   My girls get pretty excited when I make this pudding, I am happy that they were eating a pudding that was full of healthy fats instead of refined sugar. You are going to love this  creamy, decadent, vegan chocolate pudding. I mean its delicious, easy to make, and nutritionally dense.

This chocolate pudding is not your typical chocolate sugar ladened pudding. This creamy, decadent, vegan chocolate pudding is nutrient dense. Avocado’s are a great source of healthy fats- monounsaturated and polyunsaturated fats, folate, and carotenoids. And the cocao is a source of antioxidants and magnesium. Finally, this pudding is sweetened with maple syrup but you can easily substitute for dates. Now that’s a healthy pudding.

This creamy, decadent chocolate pudding has 4 simple ingredients avocados, cocoa powder, maple syrup and coconut milk. Because we were dipping fresh fruit in the pudding I decided on a more intense chocolate flavour and opted for a less sweet pudding. If you prefer a sweeter version I would add more sweeter. It’s super easy to make this pudding and requires only a blender.

 

I am not vegan but I do have some friends who are vegan and follow some amazing vegan bloggers like Erin Ireland and Minimalist Baker. I consider myself more of a flexitarian with an emphasis on plant based foods. I am loving most of the vegan dishes and recipes that I try.

Creamy, Decadent Vegan Chocolate Pudding.

Serves: 2 cups
Ingredients
  • 2 large over ripe avocados
  • 1/2 cup of cocoa
  • 1/2 cup of coconut milk
  • 2 tbsp of maple syrup
Instructions
  1. Place all ingredients into a blender and blend until smooth
  2. Serve with a variety of fresh , seasonal fruit.
Notes
If you prefer a sweeter pudding add 3-4 tbsp of maple syrup[br]If you prefer to naturally sweeten the pudding use 5 madjool dates.

I like to make a platter with seasonal fruit with vegan chocolate pudding. The sweetness from the fruit paired with this creamy, decadent vegan chocolate pudding is perfect for a picnic or bbq, your guests will love it.
