Chia Seed Breakfast Parfait

What better way to celebrate Mom on Mother’s Day than with a healthy and delicious breakfast.  This breakfast parfait is SO easy to make. What’s better than receiving a fresh, delicious, and healthy breakfast in bed followed by lots of cuddles and kisses.  This very berry chia breakfast parfait is a perfect breakfast for mom.

Ingredients

  • 2 cups of coconut milk
  • 1/4 cup of Chia seeds
  • 1 tsp vanilla
  • 1 tbsp of maple syrup

Instructions

  1. Combine all the ingredients in a large bowl. Stir well.
  2. Place in fridge for 2-3 hours or overnight.
  3. Place chia pudding in bowl. Top with granola and fresh berries.

I wanted to create a Mother’s Day recipe that was easy enough to make that the little ones can help out. I added homemade granola and fresh berries but you can add mom’s favourite fruit. What better way to show mom how special she is than a homemade breakfast. I love how excited my girls are to give me homemade gifts followed by breakfast.  I am truly blessed that both my girls love to help out in the kitchen. There is no other way I would want to spend my day.

This Chia pudding reminds me of my mom’s rice pudding but a healthier version. Chia seeds might be little but are packed with nutritional benefits. Did you know these little seeds are the only food to have a medical patent for blood glucose control. Chia seeds are high in fibre, protein, and anti inflammatory omega-3 fatty acids. Chia seeds can be used in cereals, smoothies, yogurts, puddings, and as an egg substitute. Who ever knew a little seed could deliver such a major nutrition punch.

We hope mom enjoy’s this simple, satisfying, and delicious breakfast.
