Winter Citrus Salad

How was your Valentine’s weekend. Ours was quiet. We decided to celebrate with a date night in. While I used to enjoy the idea of going out for Valentine’s dinner, the thought of getting dressed up and going out after the kids going to bed seems a bit much. If you are a parent, I am sure you can relate.  As family evolves so does our idea of date night. I made this simple winter citrus salad and dessert while D made the main course. It has been a rather wet and grey here on the West Coast but this bright winter citrus salad will brighten your spirits.

I like to eat seasonal whenever I can so I picked this winter citrus salad with a variety of seasonal oranges such as naval, Cara Cara and blood oranges. Each has a different juicy texture and sweetness. Oranges are known for their vitamin C and it only takes one large orange to provide us with our daily Vitamin C requirements. Vitamin C is known to play an important role in our immune system. This water soluble vitamin also has powerful antioxidant properties to help our body, cells, and tissues to fight stress. Oranges are also good sources of folate, potassium, and thiamine.

I like to keep my salads simple. This winter citrus salad is simple but big on taste. Fresh greens, peppery arugula, fresh dill, crumbled feta, sweet oranges, and a little quinoa for protein. I paired this winter citrus salad with a light citrus vinaigrette. I like my dressing to complement my salads and recommend tossing them lightly. You can store the remainder of the dressing for up to two weeks in the fridge.

Ingredients

  • 2 cup of mixed greens
  • 1 cup of arugula
  • 1/4 cup of dill
  • 1/2 cup of cooked quinoa
  • 1 blood orange
  • 1 cara cara orange
  • crumbled feta
  • Vinegarrette
  • 1/4 cup of olive oil
  • 1 TBSP white wine vinegar
  • 1 TBSP orange juice
  • 1/2 TBSP dijon mustard
  • 1 tsp of honey
  • Salt and pepper

Instructions

  1. ). Cook quinoa according to directions on the box.
  2. ). Peel and slice oranges
  3. ). Combine greens, arugula, and dill
  4. ). In a bowl, whisk olive oil, vinegar,orange juice, and dijon mustard. Add honey salt, and pepper and whisk again.
  5. ). Add quinoa to salad and toss gently
  6. ). Crumble feta
  7. ). Add dressing to salad and toss gently
  8. Add orange segments to salad
